      Gozenshu is a fermented rice wine, the very best for the Nihon Shu, only reserved for the Lords of feudal Japan. Den means tradition.

      Gozenshu Den is pale yellow in color, with a quite cloudy appearance. The attack is surprising, generous, very round, a great aromatic fineness, very fruity, green anise, grated green apple, white peach and lily of the valley notes, with no weakness, with a superb balance and purity.
      Nose is very much a white wine straight out of the vat, on lie.
      We take delight in the acid apple side, the viscosity (round drops), the color between white alcohol and young Sancerre.
      Nose is sometimes Sauvignon, between flower and fruit. Concentrated and harmonious.
      At the beginning, middle and end there is never any weakness in the taste, length, an aromatic persistency, a great balance and a superb richness.
      No astringency, the sweetness and sourness more pleasant than the acidity.
      The fifth taste (or umami) is very rich.
      Mouth is fleshy, strong, full. We like the warm side, the balanced acidity and the light, pleasant bitterness.
      You can sense a perfect mix with bitterness, fishes, citrus fruits, root vegetables, scallops, langoustines.
      The time in the mouth is disconcerting. A lot of elegance, fineness, very mineral.
      This Gozenshu is very feminine.

      Our perfect combination : you will appreciate it with oysters.
      Or in a more gourmet way as follows: take some very thin slices of San Daniele or Bellota quality Pata Negra ham.
      Rinse your tongue and palate with Gozenshu Den, then dip a slice of ham generously in the Gozenshu. Taste immediately. Ham umami explodes, salt arrives pleasantly, flavors sparkle and grow. Ham becomes milder and salt covers the tongue and the palate with the most delicious sensations!
      Pairing will also be remarkable with fat tuna or salmon sashimi, yakiniku grilled wagyu mea, sukiyaki fondue.

      Rotate the bottle (head to tail) 2 or 3 times. Rice starch saccharification generates glucose, which is more dense than the rest of the liquid. The glucose is at the bottom of the bottle and this rotation helps spreading uniformly throughout the bottle.

      Date Masamune was a lover of art and good meat, gourmet and particularly fond of fermented rice wines commonly called sake. Our Lord in question, in order to secure his permanent supply of sake, then appointed six financially well- established (prosperous) families to create real sake breweries and elaborate high-end sake to supply himself and his family. To do this, the families had to buy him the best rice, very expensive. The fruit of this rice trade also enabled him to maintain his armies. The Isawa family created the Katsuyama house at their request and started making homemade sakes: the Gozenchu. Since then, three and a half centuries have passed and, from these 6 elected families, only the Isawa family, owner and operator of the brand KATSUYAMA, has survived in the high end and continues brilliantly, led by the twelfth generation in the person of Jihei Isawa. It should be noted that the Date family still exists and that its current 34th generation continues to be provided by the Isawa family! The range we offer comes in 6 nihon-shu, among which 4 Gozenshu which tasting will surprise you enormously (their consumption was reserved, in the past, exclusively to the Lords). These Gozenshu are extraordinary, surprising, confusing, and rare and can’t leave you indifferent. One thing is certain, it will be very difficult for you, having tasted these nectars of the Lords, to revel in the same way with all the other sake or nihonshu present on the market.
