    “EDOMAE” series was developed in collaboration with Japan's most Michelin-starred sushi restaurant. This UMAI Edomae vinegar is ideal for those wishing to discover red vinegar. This pale red vinegar embodies the “Edomae-sushi” tradition with a light, pure, mellow and aromatic flavor.

    It combines deep aroma and flavor of long-aged sake lees with rice sweetness and a clean, refreshing taste. With this Umai Edomae red vinegar, you can make your own sushi vinegar by adding salt, kombu dashi and sugar. It's perfect for all fish, from oily to white, and is ideal for sushi fillings such as marbled tuna belly (Oh-toro), sea eel (Anago) and salmon. It can also be used to make barbecue sauce or to marinate pork ribs.
