    Kisaichi's “EDOMAE” vinegar series is designed for high-end restaurants. High-end sushi restaurants mix several types of vinegar and seasonings to prepare their original sushi rice.

    “EDOMAE” series was developed in collaboration with Japan's most Michelin-starred sushi restaurant. This vinegar is a blend of rice vinegar and sake lees. Sake dregs richness and acidity are a perfect match for prepared garnishes and richly-flavored mature fish.

    This vinegar is guaranteed additive-free. This vinegar is ideal for sushi toppings such as MAGURO or tuna, KOHADA or spotted shad, anago (sea eel) and mature fish. If you mix around 300g of freshly cooked rice with 3 cl of this seasoned vinegar, you'll get star-quality sushi rice.
