    Soy sauce used for this syrup, naturally brewed and matured for three years, is made from soy and wheat from Oita prefecture and mineral-rich salt. Mirin chosen to bring depth to flavours is brewed with glutinous mochi rice, rice and malted rice.

    Its rich sweetness is much higher than that of ordinary mirin. Finally, this syrup particular sweetness is due to the use of raw black cane sugar from Hateruma island located 460 km from Okinawa Préfecture main island (Hateruma is Japan's southernmost inhabited island).

    In Japan, soy sauce is commonly used in pastries, chocolates, ice creams and other sweet treats.
