      Founded in 1893, Sasaki Shuzo brews its sakes in "Rakuchu", in the heart of Kyoto's historic city center. Of the original 300 or so breweries, it is the only one to survive in this district.

      Kyoto's exceptional topography and abundant water were the main reasons why sake was brewed in Kyoto, and why Kyoto was designated the capital for 1,000 years.

      This magnificent sake, with its crystalline transparency and yellowish highlights, offers magnificent, elegant aromas, typical of daiginjo sake. It is sweet, fresh and spring-like, with notes of white flowers, pear, white peach and melon, and a soft, elegant flavor of fresh green leaves and chervil.

      On the palate, flavor is soft on the attack, leading to a refined sweetness that, combined with umami, leads to a fresh cream taste. This is followed by opulent, rich flavors, beautiful sweetness and elegant acidity.

      This sake is reminiscent of good white Burgundies. Our food pairing suggestions :

      -Veal rump, veal head, roasted poultry, low-temperature cooked pork, lamb leg, grilled fish

      - Blue cheeses, Baragnaudes, Termignon blue cheese

      - Peach pie, mirabelle plum pie, strawberry carpaccio, vanilla desserts
