      Sengetsu, meaning "crescent moon", takes its name from Sengetsu Castle, another name for Hitoyoshi Castle, where Sagara clan ruled the Hitoyoshi-Kuma region without interruption for 700 years.

      Sengetsu boasts over a century of history and tradition. To create their shochu, they use only carefully selected high-quality rice and pure Kuma riverbed water from Hitoyoshi's unspoiled nature. Sengetsu Shochu is particularly popular with people of Hitoyoshi, birthplace of Kuma Shochu.

      Their shochu is a standard for Kuma Shochu, with a mild flavor and a hint of umami that goes perfectly with hot water.

      Word sengetsu not only means "crescent moon", but is in fact the finest type of crescent moon, where moon looks like a curved thread in the sky. Six stars surrounding the crescent moon on their label represent the six toji - master distillers - who have carefully protected Sengetsu history for over a century. This Sengetsu shochu is ideal for discovering this Japanese spirit, and for sake lovers looking for something new.

      This shochu benefits from the Kuma Geographical Identity, as it is made in Kumamoto with 100% rice and local water. It's a lively, light shochu, with a rich aroma and a mellow, fruity taste and subtle umami, perfect for accompanying temaki sushi, chicken tajine with lemon, Caesar salad, smoked salmon or gravlax, simmered nimono-style dishes, grilled fish or tempura, scallop or cuttlefish tartare...and ideally even sushi. Shochu is drier than sake.

      Sake sweetness can clash with sushi sweetness. Shochu itself has no sugar and goes perfectly with sushi. This shochu is generally recommended for tasting on the rocks or diluted in water (oyuwari). Tasted hot, at 40-45°C, it exudes sweet notes of freshly steamed rice. Dominant flavors: white flowers, herbs, honey, stone fruit.

      Since its foundation, its "Tôji" (master distillers) have worked exclusively for their distillery, which was rare at the time. Sengetsu Shuzo produces new generations of Tôji from their young distillers. Current 6th generation of Tôji continue to perpetuate original methods passed down to them. Importantly, the 3rd generation Tôji, Toyoka Sosogi, was awarded the title of "Contemporary Master Craftsman", the highest distinction for those working in the industry. It was the first time anyone in the shochu industry had received it. He developed techniques inherited from the distillery's founder, which today form Sengetsu Shuzo foundation.

      As flagship brand, Sengetsu, is a shochu with a rich aroma and mellow taste that evokes thin crescent moon over Hitoyoshi Castle, and is particularly popular in the region. Rice used to make it comes exclusively from carefully cultivated local fields.
