Depuis plusieurs années nous avons mis en commun nos compétences, et avons cherché des produits d'une qualité insoupçonnable avec la même philosophie : recherche des produits directement sur les lieux de production, refus de tout traitement chimique aussi bien sur la plante que sur le produit et a fortiori toute irradiation (hypocritement appelée ionisation), veiller à ce que les personnes travaillant dans ces plantations travaillent dans des conditions optimales, exiger de nombreux tris pour ne garder que les grains ou baies d'exception, refuser tout stockage long et acheminer les produits sans intermédiaire, c'est-à-dire avec une traçabilité maximale.

Fruity, intense citrus taste, with ripe lemon, candied lemon, dried lemon peel with peaks of menthol. Despite its acidity a hot, sweet note emerges.
The limou exudes almost smoky, spicy, acidic, lemony notes. On the palate, the acidity is incisive, the bitterness elegant, with notes of candied citron, candied mandarin and almost liquorice touches.

These are the leaves of the tree producing the peppercorns, gently dried and reduced to powder. The fragrance is surprising. We find the same flavour as in the peppercorns, but with dominant plant notes, evoking verbena and lemon.
The dominant aroma is lemon and citronella, very fresh with intense fruitiness. To taste there is no anaesthetic effect, nor is it really spicy, the flavour is citrus - lemon, mandarin, candied citron, with spicy notes of camphor and a touch of menthol. The last taste is a mild and pleasant bitterness.

Smell is powerful, in a very fresh register: eucalyptus and camphor are dominant, a strong presence of lemon and menthol evoking black seed, beautiful floral touches and aromatic herbs, mainly sage and bay leaf.
The seed has a very pleasant odour, evoking caramel with notes of liquorice. It has a note of celeriac, reminiscent of Madras curry. The flavour of the seeds is bitter and tastes of celeriac.
The beans have very little odour. In the mouth the chocolate taste appears immediately, with a burnt sideand a pleasant bitterness, without any sweetness.

A first smell releases delicious, sweet aromas, with milky notes evoking yoghurt, warm notes of angelica reminiscent of lemon, candied citron, desert lime, very ripe oranges, orange peel or orange blossom. We can also smell base notes of bread crusts, grapes, hay and chocolate.
This is a rare and sublime pepper. It is a tedious job to remove the outer skin of these tiny grains, to keep just the kernel with its subtle and delicate aromas. With its lightly smoky, citrus, aniseed notes with a lovely tarragon presence.
The nose of Vanilla White Pepper is subtle, expressing the warm and sweet notes of vanilla. After milling, the notes are fresh, vegetal and floral, with a dominant mint, touches of citrus and eucalyptus.
